Gratinated Milanese Schnitzel

- Broccoli
- White Chardonnay wine from Savoie Domaine Chevallier Bernard
- Parmesan
- Fresh cream
- Fresh tagliatelle
- Butter
- Breadcrumbs
- 1 egg
- Flour
- Mozzarella
- 1 veal schnitzel per person
- Parma ham
Étapes
- Start by preparing the schnitzels. Place 3 plates: one with flour, one with beaten egg, and the third with breadcrumbs mixed with parmesan (50/50).
- Flatten the schnitzels with a rolling pin. Dip the schnitzel in the flour, then in the egg, and finally in the breadcrumbs-parmesan mixture.
- Let them rest in the fridge for at least 20 minutes to ensure a crispy texture during cooking.
- Cook the broccoli in water and set it aside.
- Cook the schnitzels in butter in a pan. Once cooked, place them in an oven-safe dish.
- Preheat your oven to grill mode at 200°.
- Place a slice of ham and a slice of mozzarella on each schnitzel and place them in the oven.
- Cook the tagliatelle al dente according to the package instructions.
- Put the broccoli in a pan and add cream and parmesan. Let it warm up while the cheese melts in the oven!
- Serve the pasta covered with broccoli and parmesan sauce alongside each schnitzel.
