Pot-au-feu with Mondeuse
“The weather is getting cooler, how about warming up with a pot-au-feu? Enjoy it with our red Jongieux Mondeuse wine!”

Ingrédients
- Jongieux Mondeuse red wine from Domaine Chevallier Bernard
- Bouquet garni
- Garlic
- Cloves
- Onion
- Celery
- Turnips or rutabaga
- Leeks
- Carrots
- 1 marrow bone per person
- Beef, about 150g per person (chuck - plate ribs - gîte)

- Stick the peeled onion with the cloves.
- Prepare the vegetables and cut them into large pieces.
- In a large pot (some prefer a Dutch oven), bring 3 liters of water to a boil.
- It's time to drop everything into the boiling water. If you need an order, start with the vegetables, then the bouquet garni, followed by the garlic, salt, and pepper. Add the meat last.
- Cook everything for 1.5 to 2 hours! Skim off the top occasionally.
- Roll the marrow bones in coarse salt to preserve the most important part: the marrow.
- Cook for another hour.
- Drain everything and serve with mustard! Enjoy with our Mondeuse!
