Wild Boar Roast with Mondeuse and Polenta

- Thyme
- Polenta
- ½ cup vinegar
- 1 cup oil
- Peppercorns
- 1 bouquet garni
- 1 carrot
- 3 shallots
- 3 onions
- ½ liter red Jongieux Mondeuse wine from Domaine Chevallier Bernard
- 1 wild boar roast
Étapes
- Prepare the marinade:
- Slice 2 onions and 2 shallots and place them in a bowl.
- Add the bouquet garni, peppercorns, oil, vinegar, and Mondeuse wine.
- Cut the carrot into rounds and add it to the bowl.
- Marinate the meat for 24 hours.
- Drain and pat the meat dry with a towel.
- In fat, brown the meat along with 1 onion, 1 shallot, and thyme.
- Pour in some of the marinade.
- Cook on low heat for 1.5 hours and serve with polenta.
