Wild Boar Roast with Mondeuse and Polenta

  • Prepare the marinade:
  • Slice 2 onions and 2 shallots and place them in a bowl.
  • Add the bouquet garni, peppercorns, oil, vinegar, and Mondeuse wine.
  • Cut the carrot into rounds and add it to the bowl.
  • Marinate the meat for 24 hours.
  • Drain and pat the meat dry with a towel.
  • In fat, brown the meat along with 1 onion, 1 shallot, and thyme.
  • Pour in some of the marinade.
  • Cook on low heat for 1.5 hours and serve with polenta.
